Courgette Burger

- Ingredients

- 350g (120z) courgettes, grated
- 225g (8oz) carrots, peeled and grated
- 1 dessert apple, peeled, cored and finely chopped
- 6 spring onions, trimmed and finely chopped
- 1 clove of garlic, peeled and finely chopped
- 1" piece of root ginger, peeled and grated
- 2 tbsps sage, chopped
- 100g (3½oz) sage Derby cheese, cubed
- 100g (3½oz) fresh breadcrumbs
- 2 eggs, medium
- 6 tbsps plain flour
- 3 tbsps oil
Central Heating Models: Set the oven to 180°C.
- Mix together all the ingredients except for the flour and the oil, until well combined.
- Season, divide into 8 and shape into burgers.
- Coat the burgers thoroughly in the flour (the mixture can be frozen at this stage - open freeze and store for up to 3 months)
- Place on a greased baking tray and bake in the oven for 25-30 minutes as set out below, turning over to brown both sides
Central Heating Models Bake on shelf position 2 in the roasting oven for the first 15 minutes then transfer to the oven floor to brown the other side.
Suitable for vegetarians if the cheese is substituted for vegetarian cheddar.
