Lamb Noisettes

A lovely way to serve fresh spring lamb with a tasty Mediterranean flavour.

  • Sprig of Rosemary
  • Ingredients
    • 4-5 tbsps passata or a small tin of chopped tomatoes, drained
    • 2-3 tbsps dry white wine
    • 12 noisettes of lamb, trimmed and tied
    • 125g (4oz) mozarella cheese, sliced
    • A little olive oil
    • 1 tbsp fresh basil, roughly chopped
    • 1 tbsp fresh parsley, chopped
    • 2 sprigs of fresh rosemary
Method

Central Heating Model: Set the oven thermostat to 200°C

  1. Mix the passata and wine together
  2. Arrange noisettes in a dish an brush with a little sauce, pouring any excess into the dish
  3. Top with slices of mozzarella and brush with a little oil
  4. Sprinkle with half of the herbs and bake for 20-30 minutes on shelf position 2 of the top, or roasting, oven until cooked to your liking
  5. Garnish with the remaining herbs and servce with oven fried potatoes
